Ackee and Salt Fish with Rice and Peas
OK so we didn’t have this for dinner
but this is a great pic and i love :love: this dish

Recipe For Ackee and Salt Fish with Rice and Peas
Rice and Peas
Ingredients:
- 2 cups of rice
- 1 can or 1 cup of fresh red peas (kidney beans)
- 5 cloves of garlic (finely chopped)
- 1 uncut scotch bonnet pepper
- 3 Scallion (spring onions may be used as a substitute)
- 1 can of coconut milk
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 2 sprigs of fresh thyme (2 teaspoons of dried thyme may be used as a substitute)
Method
Drain liquid from beans
add coconut milk and sufficient water to make 5 cups of cooking liquid
Add beans and garlic in a pot and bring to the boil, simmer for 2 minutes
Add scallions, thyme, and black pepper and salt to taste, simmer for a further 2 minutes
Add scotch bonnet pepper
Add rice
Let boil uncovered for 20 minutes
Remove scotch bonnet pepper then serve

Ackee and Salt fish
Ingredients:
1 Can of ackee, drained
1/2 lb boneless (boiled) salt cod fish
3 tablespoons oil
2 onions, sliced
1 small bell pepper
1/4 scotch bonnet pepper skin finely chopped
2 small tomato, chopped
1/8 teaspoon black pepper
Method
Soak the salt cod in a pot of water overnight to remove most of the salt. If the cod is still very salty, boil in water for 20 minutes drain cod and cut or break into small pieces. Heat oil in a frying pan. Add the onions, scotch bonnet pepper, tomatoes, and bell peppers. Stir for a few minutes add the cod. Stir simmer for 5 minutes, then add the can of drained ackee. Do not stir because this will cause the ackee to break cook for a few two minutes then sprinkle with black pepper.
