Well we had Rosh Hashanah dinner

i didn’t take that many pictures

but on the menu was

  • honey and apples

Honey Cake

got this recipe from Honey Cake

Recipe:

4 eggs
1 cup vegetable oil
1 cup brown sugar
1 cup honey
1 cup double strength black coffee
350 g [12 oz] self-raising flour
[or make it yourself with this basic formula: 1 cup all-purpose flour and add 1-1/2 teaspoons baking powder and 1/2 teaspoon salt]
1 teaspoon allspice and 1 teaspoon cinnamon.

Method:

Beat eggs, oil and sugar until sugar has dissolved. Add honey and coffee and then beat in the flour mixed with the spices gently.

Bake in a large round fluted tin [bundt/tube pan] at 170 [338 F] degrees for 1 hour or til tested it is cooked in the center

Carrot Cake

INGREDIENTS

  • 4 eggs
  • 1 1/4 cups vegetable oil
  • 2 cups white sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 cups grated carrots

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
  2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan
  3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

  1. hi rigi, how did you like the cake? i also made it and everyone really liked it — only thing i didn’t like is that i found it very difficult to unmold from the pan i used — i actually think the recipe could do with another 1/4 cup of flour. i am going to mention this in the recipe in my blog.

    btw, what is matzo hemp flour?? did you mean matzo meal mixed with hemp seed flour? never heard of this before….interesting.
